This isn't the dry, hard gingerbread cookie you tolerate during the holidays. This is gingerbread reimagined by someone who refused to accept that "traditional" must mean "mediocre."

We start with fresh ginger—grated by hand, not dried and powdered—which provides brightness that ground ginger cannot match. Real molasses contributes deep, almost smoky sweetness. The spice blend took weeks to calibrate: cinnamon, nutmeg, cloves, and cardamom in proportions that create warmth without overwhelming.

The secret weapon: brown butter. We cook butter until the milk solids caramelize, creating nutty complexity that amplifies every other flavor in the cookie. It's an extra step most bakeries skip. We consider it essential.

The texture is soft and chewy—the opposite of traditional gingerbread's snap. We've engineered the moisture content to maintain this texture for days, even as the flavors deepen and marry.

Available only during our founding period. After Christmas, this flavor disappears until next year.
